Spicy Parmesan Bruschetta
Ingredients
Bread:
2 ciabatta rolls, sliced into quarters
Topping:
2 cups ripe tomatoes, diced
¼ cup fresh basil, chopped
3 cloves garlic, minced
¼ cup extra virgin oilive oil
1 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
Finishing Touches:
Grated Parmesan cheese
Red chili flakes
Additional Notes
For this recipe we used Campari tomatoes, otherwise known as Tomatoes on the Vine, but you can use any flavorful ripe tomatoes! Experiment with Roma, San Marzano or even large Cherry/Grape Tomatoes.
Make sure that you're using a high-quality extra virgin olive oil! We want a medium to strong flavor of the oil so don't use olive or light tasting extra virgin.
Select your favorite bread! Feeling like an extra hit of flavor? Try using aged sourdough!
Use only the amount of chili as you can stand! Red chili flakes can get real hot real fast, so use with caution!
Prep Ingredients
1. Remove tomatoes from the vine and dice
2. Remove basil leaves from stems and chop, be careful not to bruise those beautiful leaves!
3. Using your knife, smash the garlic and then mince to desired fineness. NOTE: The more you mince your garlic the more intense the flavor!
4. Combine dried Italian Seasoning with Extra Virgin Olive Oil before adding you Bruschetta mixture and let it sit for a few minutes. Why? Oil can rehydrate dried herbs and enhacing their unique flavors
Instructions
1. Combine diced tomatoes, basil, garlic, oil & herb mixture, salt, and pepper in a medium sized bowl. Make sure that everything is throughly combined! Let sit for at least 10 minutes to allow flavors to meld.
2. While the topping is marinating, cut your cibatta rolls and drizzle with 2 tbsp of oil
3. Bake your oiled bread for 7-10 minutes at 425° F or until GBD (Golden Brown & Delicious)
4. Top with bruschetta, sprinkle desired amount of red chili flakes and Parmesan cheese
5. Enjoy with friends and family!
